1. Flavour That Stops You Mid‑Sentence


A dish is worth it when it makes you forget what you were talking about.

You know that moment — when you take a bite and instinctively go quiet because your brain is busy processing the delicious chaos happening in your mouth.


Ask yourself: Did this dish make me pause?   Did it make me want another bite immediately?   Did it make me consider ordering a second one “for research”?


If yes, that’s a win.


🔥 2. Technique That Shows Intent (Not Ego)


We love a chef who knows what they’re doing. We do not love a chef who wants us to know they know what they’re doing.


There’s a difference.


A dish is worth it when the technique elevates the flavour — not when it’s there to show off.


So we ask: Is this technique here for taste… or theatre?   Does it make the dish better, or just busier?

So we ask: Does this dish have a clear identity?   Is it memorable?   Would we recognise it again in a blind taste test?

💛 5. Emotional Impact (Yes, Food Is Emotional)


Some dishes hit you in the nostalgia. Some hit you in the comfort. Some hit you in the “I want to cry because this is so good.”

A dish is worth it when it makes you feel something.


We ask: Did this dish spark joy?   Did it make us smile at each other?   Did it become part of the night’s story?
